Uses
Used as quality improver, pH modifier, metal ion chelating agent, binder and swelling agent. It can stabilize natural pigment and protect the colour of food in beans, canned fruits and vegetables, bean paste filling; it can emulsify the fat and keep the uniform texture in canned meat; it can improve the water-holding capacity and prevent the fat from deteriorating when used in canned meat and meat products. Added to beer, it can clarify the liquor and prevent turbidity. It is excellent water softener without precipitation.
